1 .WHAT ABOUT SHELF LIFE? DOES COCONUT OIL NEED TO BE
KEPT IN THE FRIDGE?
Coconut oil is a saturated fat, its antioxidant properties make the oil naturally
very stable. The DME extra virgin coconut oil is produced so quickly its free
fatty acid (FFA) level is less than 0.1% at production. This oil has an almost
indefinite shelf life when kept under preferred storage conditions. Store out
of direct sunlight in a cool dry place. There is no need to refrigerate, if you
do, it becomes very hard. The oil solidifies naturally at 24 degrees. Melt the
oil by standing the container in warm water. Do not microwave.
2. WHAT HAPPENS WHEN DME EXTRA VIRGIN COCONUT OIL IS
HEATED? WILL IT BECOME HYDROGENATED?
It is perfectly safe to heat coconut oil for cooking (it has a smoking point of
177C. No cooking oil should be heated above its smoking point.) Being
saturated, EVCO is very stable and does not readily oxidise to form free radicals,
as it happens with the common unsaturated seed oils. EVCO is the ideal oil for
deep frying and is safe to use several times over. Virgin coconut oil is made
directly from fresh coconuts and it not further refined. We call Niulife Coconut
oil "Extra virgin" because, like the best traditional cold pressed olive oil, it is
made from the first and only pressing.
3.WHAT IS THE DIFFERENCE BETWEEN VIRGIN AND EXTRA
VIRGIN COCONUT OIL?
The cheapest coconut oil is made from copra, the dried flesh of coconuts, and
must be industrially refined, bleached and deodorised (RBD). In order to make
it edible. Virgin coconut oil is made directly from fresh coconuts and is not

4. WHAT IS THE DME SYSTEM?
DME system is a technology developed by Dr Dan Etherington of the Australian
National University. The DME process enables South Pacific islanders to
produce a very high quality extra virgin coconut oil within just one hour of
opening a coconut. The DME process is Direct because it is quick, it is Micro
because it is farm or village based and it Expels the final product at the production

5.COULD THERE BE SIDE EFFECTS WHEN FIRST STARTING TO
USE EXTRA VIRGIN COCONUT OIL?
Extra virgin coconut oil is a safe food but people who are used to a low-fat
diet, or who are generally unhealthy, might experience some side effects at
first. Extra virgin coconut oil contains high levels of lauric acid which is a
strong anti-viral, anti-bacterial and anti-fungal agent. As these microbes are
killed and eliminated from the body, they can cause temporary side effects
like diarrhoea. It is best to build up to the recommended daily dosage gradually
over a couple of weeks. Reduce your intake if there are any side effects. It
is unlikely, but some people could possibly have an allergic reaction to
coconut oil. Coconut oil has been used safetly by millions of people in tropical
communities for thousands of years.
6.BUT ISN'T COCONUT OIL BAD FOR YOU?
No! Popular belief used to hold that coconut oil, due to its high level of saturated
fat, was bad for you. However, not all saturated fats are alike and current
research shows that the fatty acids in coconut oil, the medium chain triglycerides
(MCTs), do not raise serum cholesterol or contribute to heart disease like the
long chain triglycerides found in seed oils. Coconut oil is easily digested and
is not deposited as fat in arteries because it is metabolized directly without
passing through the carnitine transport system. In fact, the evidence points to
coconut being a very healthy oil.
